Food For Various Diseases

Tamales diet, low calorie nuggets, cornbread and sausage light truffles, amaranth, soy ceviche Hamburg, among others, were prepared by students of the Faculty of Higher Studies (FES) Zaragoza, UNAM, in the first event Sensory Evaluation of Food.
Based on the recommendations of the International Organization for Standardization (ISO 9000), and the Standards for Sensory Analysis (SSA), students in the career of Biological Pharmaceutical Chemistry (QFB) prepared products, in order to know the procedures used in the food industry to assess the sensory method, complying with ISO 9000.
Sensory tests, said Marcela Hernández Isaiah, teacher and organizer of the event are a scientific discipline used to evoke, measure, analyze and interpret reactions and characteristics of food and materials.
On campus II, the seventh semester students of the art Food Science Laboratory evaluated 23 alternative products made by them, as tamales diet for people with diabetes mellitus type II, prepared with ingredients rich in fiber such as flax, nopal, oats and mushrooms, which also help maintain normal levels of blood glucose.
They also made light sausages with high protein content to contain turkey meat and soybeans, the latter helps control diabetes, prevent breast cancer and prostate cancer, reduces symptoms of menopause and is an ally against heart disease .
Another product is the low-calorie nuggets, soy, chicken breast, amaranth, panela cheese, seasoned with egg, onion, garlic and salt, especially for those with overweight and obesity.
In addition, amaranth produced truffles and cheese, oatmeal and honey, good as a snack and low amounts of sodium, potassium and calcium. Are nutritious and suitable for those with hypertension. Have high dietary fiber and calcium.
Also, light cornbread created, whose main ingredients are corn and figs, egg, margarine and low fat condensed milk. This product contains no flour or egg yolks, and is rich in fiber which improves digestion, reduces body weight and cholesterol control. “It’s cheap and very tasty,” stressed students.
Chocokuinox, a muffin is designed to prevent obesity in children. Made with flour, wheat bran added, containing blueberries incorporated into the dough, covered with low-sugar chocolate and amaranth, ingredients that provide protein.
Other food is the ingenuity of the university is the chocolate diet, even for diabetics. Was used to manufacture chocolate liquor, lecithin and milk powder, the latter was removed and replaced sugar with polydextrose and educolorante. “A chocolate bar covers one fifth of the daily energy needs, about 360 calories.”
Hamburg are called Hamburgers made with soy meat, or with the protein textured vegetable that is high quality, is obtained from an extrusion process from defatted soy flour, contain no cholesterol, so they were created for those have high blood pressure.
The soy ceviche is also thought to hypertension, being low in sodium and fat, is made with natural ingredients such as tomato, carrot and celery.
